The Orrery seasonal truffle menu
The Orrery seasonal truffle menu will be available from the 19th October to the 30th December. Head Chef Igor Tymchyshyn has created an exquisite 5 courses menu, using only the best white truffles or ‘Diamonds of the Kitchen’. The menu is priced at £99 per person with the option of an additional cheese course.
Dishes include: Seared Orkney scallop, Jerusalem artichoke, apple; Potato ravioli, white truffle, butter emulsion; Poached Lobster, Champagne velouté, white truffle; Beef filet, braised shin, celeriac puree, sauce Périgourdine and for dessert Bourbon vanilla & mascarpone crème brûlée, blackberry sorbet. Tuna with truffle at Yashin Ocean House
Yashin will be serving its signature, Tuna with truffle infused ponzu jelly dish. The ponzu is a citrus-based sauce commonly used in Japanese cuisine that perfectly offsets the earthy truffle flavour. Available on the à la Carte menu and Yashin’s Hajimeteno Share Course which is priced at £49 pp. Other highlights from the eight course sharing menu include; miso cappuccino; paradise prawn tempura; and the sashimi island three kind without soy sauce. With Truffle season in full bloom, Sauterelle have been busy cooking up all sorts of delicacies to celebrate this luxurious ingredient.
