Keeping up with the appetite for all things Scandinavian, Phaidon Press published Fäviken on 8th October, the first cookbook from one of the world’s most isolated and fascinating restaurants. Fäviken Magasinet, number 34 in the World’s 50 Best Restaurants list, is located on a remote farm in Northern Sweden and seats only 12 guests per night. In his new book, 28-year-old head chef Magnus Nilsson reveals his remarkable approach to sourcing and cooking with ingredients that are farmed and hunted in the immediate vicinity of the restaurant. The book features over 200 stunning photographs of Nilsson’s food and the surrounding area alongside 100 recipes for simple basics such as pickles, bread and preserves, as well as the more complex dishes created by Nilsson and served at Fäviken.
