Elizabeth Haigh (Allen)


Elizabeth Haigh (Allen) received a Michelin star at Pidgin in East London just weeks after leaving to pursue her own dreams of a restaurant of her own in London. She is currently working on her new project, Kaizen House, with the view to building her own restaurants

and incorporating the Japanese philosophy of continuous improvement. Kaizen House’s first project will be the Shibui restaurant. Shibui alludes to the beauty in simplicity and in creation and means making a piece that will lead the viewer to draw beauty out of it for oneself. Shibui will promote wood fire cooking with European dishes with subtle details but bold Asian flavours, delivering everyday dishes elevated to refined levels.

Elizabeth studied architecture for four years before realising she was on the wrong path and taking part in Masterchef 2011. She went on to get her chef qualifications and to work with some of London’s top chefs such as Neil Rankin at Smokehouse and the Galvins at Galvins at Windows before becoming Head Chef at Pidgin in Hackney in 2015.

Elizabeth appears on BBC1’s Saturday Kitchen and was named as ‘Chef to Watch’ at the National Restaurant Awards as well as appearing in the 4th spot in the OFM list.
