Roberto Costa brings the traditional gluten-free recipes of his homeland to Fulham
Roberto Costa and the team behind Macellaio RC have opened their fifth London restaurant, Ardiciocca, in Fulham. Translating as artichoke in Genoese-Italian, the new trattoria and pizzeria offers hearty Italian dishes that celebrate traditional recipes whilst being entirely gluten free.
With Ardiciocca, Roberto Costa hopes to make the comforting, homely recipes of his childhood available to all by offering fresh, flavourful, gluten-free dishes at great value. Furthermore, according to Roberto’s ethos, or Metodo Costa, simplicity is key. He believes that the wonderful Italian ingredients used at both Ardiciocca and Macellaio RC should always be treated with a delicate touch: “We just need to enhance the flavours and make them shine, the treasure is already there”.
Roberto has worked alongside Executive Chef Matteo Riganelli to develop the concise selection of hearty, wholesome Italian classics that make up the Ardiciocca menu. To start, guests can enjoy dishes such as Salame with a broad bean and pecorino salad and Genovese stuffed vegetables. For mains, a traditional Minestrone with pesto sits alongside Sardinian gnocchi with sausage ragu and Cuttlefish and pea stew. Four delicious pizzas are also available. Left to rise for 72 hours, the dough is made using a special blend of gluten-free flours and naturally sparkling Ferrarelle water to achieve the perfect texture. It is then turned into the traditional Pizza Napoli or topped with Nduja, lemon and rocket or Stracchino and pesto. As a perfect reflection of the menu, the wine list at Ardiciocca celebrates independent Italian producers, with all wines hand-picked by Roberto.
For those who would rather wine and dine in the comfort of their own homes, Ardiciocca offers a take-away and delivery service. In support of global efforts to reduce single-use plastics, all take-away dishes are served in reusable and recyclable glass jars.

About Roberto Costa:
Roberto Costa was born and raised in Genoa, and from a young age could be found helping his mother at their family-run trattoria in the suburbs of the city. He went on to run a number of restaurants and bars in Genoa, and in 2003, alongside Alessandro Garrone, he founded Maxela, which opened twelve hugely successful branches across Italy including Genoa, Modena, Rome and Milan. Inspired by Maxela’s success in Italy and keen to showcase the best produce from his native homeland to a brand-new audience, Costa took on his next challenge and moved to London. He opened the first Macellaio RC ‘butchery with tables’ in South Kensington (October 2012), followed by Exmouth Market (August 2015), Union Street (September 2016), and Northcote Road (August 2017). Roberto has taken the Macellaio RC concept back to Italy, opening a branch in Milan (May 2018). Roberto has also recently opened a new site in his home town of Genoa (May 2018). Muscoli is a step away from meat, focussing instead on seafood, specifically mussels. Ardiciocca, Roberto’s latest restaurant project, opened in Fulham in 2018 as an entirely gluten-free trattoria and pizzeria.
